Are you ready to indulge in a meal that’s not only mouthwateringly delicious but also incredibly healthy? Say hello to our Soya Mince Delight! This recipe is packed with vibrant veggies, savory spices, and a touch of culinary magic. Let’s dive into why this dish is your new go-to for a nutritious and satisfying dinner.
Why This Recipe is a Health Superstar:
- Plant-Powered Protein: Soya mince is a fantastic source of plant-based protein, making it perfect for vegetarians and vegans. It provides all the essential amino acids your body needs.
- Vitamin-Packed Veggies: With onions, garlic, red peppers, celery, and carrots, you’re getting a rainbow of vitamins and minerals that boost your immune system and overall health.
- Fiber Frenzy: The combination of veggies and soya mince offers a high fiber content, which aids in digestion and keeps you feeling full longer.
- Low in Fat, High in Flavor: Unlike traditional minced meat, soya mince is low in fat. Combined with the aromatic spices, this dish bursts with flavor without the extra calories.
- Heart-Healthy: The inclusion of olive oil, red wine, and fresh vegetables supports heart health by reducing bad cholesterol and providing antioxidants.
How to Make It:
Ingredients:
- 1 large onion, finely diced (or use frozen)
- 2 cloves garlic, finely chopped (or use frozen)
- 2 red peppers, roughly chopped
- 2 sticks celery, sliced
- 2 medium carrots, peeled and sliced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1-2 tsp chili powder
- 450-500g (2 cups) soya mince (supermarkets and health food shops will have this… see freezer section)
- 3 stock cubes (mixed with a tiny bit of boiling water to dissolve)
- Salt and pepper, to taste
- 125ml (½ cup) red wine or boiling water
- 1-2 tbsp tomato purée (optional)
- 1-2 tsp sugar (optional)
Serving Suggestions:
- Avocado
- Baked sweet potato
- Brown rice
- Fresh coriander
- Wraps
Instructions:
- Sauté the Onions: In a large pan, fry the onion in a little oil until soft and translucent. This is where the flavor magic begins!
- Veggie Power: Add the celery, carrot, pepper, and spices (cumin, coriander, chili powder). Fry for an additional 5-10 minutes until the vegetables start to soften and the spices release their aromatic goodness.
- Garlic Goodness: Toss in the finely chopped garlic and fry for another minute. Your kitchen should be smelling amazing by now.
- Mix and Simmer: Add the soya mince, dissolved stock cubes, salt, pepper, red wine (or boiling water), and tomato purée (if using). Stir well to combine all the ingredients. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, stirring occasionally to prevent sticking.
- Final Touches: Taste and adjust seasoning if needed. If you like a bit of sweetness, add 1-2 tsp of sugar to balance the flavors.
Serve and Enjoy:
Plate up your soya mince with your favorite accompaniments. Whether you prefer it with a baked sweet potato, brown rice, or in a wrap, the possibilities are endless. Top with fresh coriander, a squeeze of lime, and maybe a dollop of vegan sour cream for the ultimate feast.
Quick Tip: Leftovers? No problem! This dish tastes even better the next day, as the flavors meld together.
Get ready to wow your taste buds and nourish your body with this delightful and healthy soya mince recipe. Enjoy every bite and feel good about the wholesome goodness you’re feeding yourself and your loved ones!
